Dried Apple Chips with Flax

Ingredients

    • 2 large apples (we recommend Fuji, Honeycrisp, or Pink Lady)
    • 1 tsp ground flax seeds or flax meal*
    • ½ tsp ground cinnamon
    • ¼ tsp ground nutmeg

    Directions

      1. Preheat oven to 200º F. Place one rack in the uppermost position and one at the lowest position. Line two baking sheets with parchment paper.
      2. Thinly slice apples, about ⅛ in. thick. Use a mandolin if you have one. No need to core the apple (just remove seeds).
      3. Toss flax and spices in a small bowl.
      4. Spread apple slices evenly over each baking sheet. Sprinkle flax mixture over apple chips.
      5. Bake for 2 to 2½ hours, rotating pans from top to bottom every hour. After 2 hours, test a chip by removing from oven and allowing to rest on the counter for 2-3 minutes before tasting.
      6. If chips are crisp, turn off oven and leave chips to cool in the oven for about an hour. If the chips are still chewy, continue cooking, testing every 15-30 minutes. Once done, turn off oven and allow to cool in the oven for 1 hour. Note: If chips become overcooked, remove from oven and allow to cool on the counter.
      7. Store baked apple chips in an airtight container at room temperature for up to 2 weeks.

     

      Notes

        • Ground flax or flax meal adds protein, fiber, and healthy fats (think: Omega 3s) to these chips. They're just as delicious without the flax if you don't have any on hand!
        • Use a coffee grinder or mortar and pestle to grind up flax seeds.
        • When slicing apples, ensure they're as thin as possible. This allows the apples to crisp up in the oven.
        • The color of the final apple chip will vary based on the type of apple you use. Firmer, crunchier apples tend to be lighter in color, while softer, sweeter apples are darker when dried.
        • The total cooking time will vary based on the moisture content of the apples and your oven.
        • Enjoy these sprinkled over yogurt with granola, on top of salads, with oatmeal, or on their own!
